Amelia’s Amazing Stuffed Pancake

Amelia’s Stuffed Pan Cake

Have you ever heard of Amelia Bedelia was the protagonist and title character of a series of American childre’s books written by Peggy Parish from 1963-1988, and by her nephew, Herman Parish in 1995. They had a literal sense without metaphor or allegory. I found this to be in line with my humor and it helped that my baby daughter is named Amelia.  She used to pick the fillings that were to go into the pan cake. I would call her and she would tell me the filling of the day. So, now you know the rest of the story.

You are welcome to add either bacon or Italian sausage with your pan cake.
